I am in the full festive swing of baking and have a few posts coming up to do with Christmas baking. I made some sugar cookies, admittedly the icing isn’t the neatest because it was rubbish, but they turned out really tasty. Here’s how I did it in a step by step guide.
365g Icing Sugar
1tbsp Vanilla Extract
375g Flour (I use all purpose flour)
Measure out 140g icing sugar, 250g of butter, 375g flour, 1tbsp of vanilla extract and an egg yolk for the cookie mixture. In a large mixing bowl, begin mixing the icing sugar, vanilla extract, egg yolk and add the butter bit by bit until smooth. Once smooth, add your flour little by little until you have formed a dough. Cling film and leave in the fridge for 30 minutes. Preheat your oven to 190C (electric), 170C (electric fan), or gas mark 5.
While you have a spare few minutes this is when you can do a quick bit of washing up so there’s not loads at the end, but you can also make your icing! Simply mix together your egg white with 225g icing sugar until smooth. Place in fridge.
After the 30 minutes for the dough, roll it out on a floured worktop and using your cookie cutters begin to cut your shapes. Place on a greased (I used grease paper) baking trays until you can’t cut any more out.
Once cut out and placed on a tray, pop your cookies in the oven for around 10-12 minutes, or until lightly browned.
While the cookies are cooling, see how thick your icing is. If too thick add some cold water a teaspoon at a time to make it slightly thinner.
Decorate your cookies as you so wish! Have fun and get artistic. I chose to do different patterns and finish with a sprinkle of edible glitter.
